Ivan Orkin, the brash, white, Jewish guy from New York who made his name as one of the best ramen makers on the planet has an unorthodox story. That means no tweezer food, plenty of swear words, no slow shots of the chef communing with nature. He was a problem child, fell in love with Japan, fell in love with cooking, suffered personal tragedy, and found his reason for being and his ultimate success in Tokyo.

Silk is the invertebrates' great invention, used in a range of ways from from the protective stalks of lacewing eggs to the amazing hanging threads of New Zealand's 'glow worms'. Spiders, though, have taken silk-spinning to extremes. The common wolf spider has no web, but the female is a gentle parent, encasing her eggs in silk and carrying the precious bundle wherever she goes. The bolas spider uses a ball of sticky silk soaked in a copy of moth pheromone to lure its prey. Millions of communal spiders live and feed together in a vast, towering web - an arachnophobe's nightmare.

Thirty years ago, scientists first realized that some unknown dark substance was affecting the way galaxies moved. Today, they think there must be five times as much dark matter as regular matter out there. Simon Schama's history of the Jewish experience plunges into the lost world of the shtetl, the Jewish towns and villages sewn across the hinterlands of Eastern Europe which became the seedbed of a uniquely Jewish culture. Shtetl culture would make its mark on the modern world, from the revolutionary politics of the Soviet Union to the mass culture of Tin Pan Alley and Hollywood. It was also the birthplaces of Hasidism, the most visible, iconic and, arguably, most misunderstood expression of Jewish faith and fervour. This chapter of the story travels from the forests of Lithuania, where Simon's own family logged wood and fought wolves, to the streets of the Lower East Side where the sons of shtetl immigrants wrote the American songbook. With grim inevitability, the story returns to Eastern Europe in 1940 - where the genocidal mechanisms of the 'final solution' were beginning to grind the shtetl world into dust and ash.

In episode two, we discover the golden age of the La Tene Celtic warrior and reveal how their world extended as far as central Turkey. But by the middle of the first century BC, the Celts were under threat from an expanding Roman Empire, and the Gallic warrior Vercingetorix would challenge Julius Caesar in an epic battle that would shape the future of Europe.

In the second episode, Will Smith descends 3,300 feet to the bottom of the ocean in a deep-water submersible, where even fewer people have gone than outer space. Along the way down, Will and explorer Diva Amon investigate how colour is used in the natural world and the role of bioluminescence. In the oceans, nearly 80 percent of animals use bioluminescence in some way, possibly the most common form of communication on the planet.
